Paleo EggNog Recipe

Ingredients: 

  • 2 cups non-dairy milk of choice (almond, cashew, etc.)

  • 2 cups full fat coconut milk (canned) 

  • 6 egg yolks

  • 1 tbsp. vanilla extract

  • 1/4 cup maple syrup

  • 1 tsp. nutmeg

  • 1 tbsp. cinnamon

  • pinch of salt

  • optional 1 cup bourbon or rum

 

Instructions: 

  1. Bring milk, coconut milk, vanilla, and spices to simmer over medium heat for 5-7 minutes then remove from heat.

  2. Whisk eggs yolks and maple syrup together in a large mixing bowl.

  3. Temper egg yolks by slowly adding milk mixture while whisking so eggs don't curdle.

  4. Continue until the entire mixture is together in a bowl, then return mixture to heat in saucepan.

  5. Simmer on low while whisking for another 5-7 minutes.

  6. Remove eggnog from heat, mix in alcohol (if desired) and let the egg nog cool in the refrigerator to firm up for at least an hour.

  7. Serve with a pinch of nutmeg and enjoy!
