Ingredients:

2 cups non-dairy milk of choice (almond, cashew, etc.)

2 cups full fat coconut milk (canned)

6 egg yolks

1 tbsp. vanilla extract

1/4 cup maple syrup

1 tsp. nutmeg
-
1 tbsp. cinnamon

pinch of salt

optional 1 cup bourbon or rum
Instructions:

Bring milk, coconut milk, vanilla, and spices to simmer over medium heat for 5-7 minutes then remove from heat.

Whisk eggs yolks and maple syrup together in a large mixing bowl.

Temper egg yolks by slowly adding milk mixture while whisking so eggs don't curdle.

Continue until the entire mixture is together in a bowl, then return mixture to heat in saucepan.

Simmer on low while whisking for another 5-7 minutes.

Remove eggnog from heat, mix in alcohol (if desired) and let the egg nog cool in the refrigerator to firm up for at least an hour.

Serve with a pinch of nutmeg and enjoy!
