These waffles are made with tapioca and coconut flours. And dark chocolate chips, for added decadence and antioxidants.
This is NOT a staple meal. But it’s a fun Sunday morning treat to enjoy occasionally.

Ingredients:
1/2 cup Coconut Flour
1/3 cup Cacao Powder
1/4 cup Tapioca Flour
1/2 tsp Baking Soda
1/8 tsp Arrowroot
1/4 tsp Cream of Tartar
1/2 tsp Salt
1/4 cup Coconut Sugar
2 Tbsp Maple Syrup
2 eggs, separated
1/3 cup Coconut Oil, melted
1 cup Almond Milk
1/3 cup Dark Chocolate chips, over 70%
2 Tbsp Rose Petals
Maple Syrup for serving
Method:
1. In a bowl beat the egg whites until stiff peaks form. Set aside.
2. In a medium bowl, combine all dry ingredients; mix well.
3. Add almond milk, maple syrup, coconut oil, and egg yolk to the dry ingredients and mix just until incorporated.
4. Gently fold in the egg white and chocolate chips until combined. Do not deflate the egg whites. This is what will give your waffles a light texture.
5. Heat the waffle iron.
6. Follow the directions on your waffle iron to cook the waffles. Pro Tip - wait until little or no steam is coming out of the waffle iron, this makes a great crispy waffle.
7. Serve immediately with maple syrup and rose petals or hold in a 200 degree oven, directly on the rack.
